1 lb. ground beef or
turkey
1 large onion, diced
1 c. grated carrots
1 c. grated zucchini
1 c. shredded
cabbage
1 can black beans, rinsed
1 can black beans, rinsed
1/3 c. sloppy joe seasoning mix
1/2 cup water
1 8-oz. can tomato sauce
1 8-oz. can tomato sauce
¼ cup BBQ sauce
DIRECTIONS:
1. Saute meat and
onion until onion begins to become tender.
2. Add vegetables and beans,
cook until meat is cooked through and vegetables are desired tenderness.
3. Add seasoning, water, and sauces, bring to boil. If too thick, add orange juice or more water.
NOTES: I love having this stuff on hand to put on top of salads, toast, baked sweet potatoes, etc. It's a very flexible recipe that usually ends up being a mixture of whatever vegetables and sauces I have on hand, but this is the basic idea.
