Chicken Divan



Dawn La Fleur Chicken Divan Recipe
I got this recipe from the mother of one of our Elders serving in Ohio and made it for him because it was his favorite meal.  I put my notes in parenthesis after the ingredients.

2 10oz. Pkgs frozen broccoli (Kim:I used fresh-steam lightly)
2-3 c. Diced cooked chicken
2 c. Cream of chicken soup
1 c. Mayo or Miracle Whip (Kim:I used mayo)
1 tsp. Lemon juice (Kim: I used about 1 T)
1/2-1 c. Shredded cheese (Kim: I used a lot more)
1/2 tsp. Curry powder

Cook/steam broccoli  until just tender.  Drain. Place in lightly greased baking dish. Layer chicken next. (I just mixed it in a big bowl and put it in my baking dish)

Combine soup, mayo, lemon juice, and curry powder. Pour mixture over chicken. Sprinkle with cheese.

Bake in oven at 350 degrees for 25-30 minutes until thoroughly heated.

Serve over rice.

I usually double the recipe and use 5 total cans of soup and a bit more than double of mayo. But doubling the recipe makes enough for our family of 7 with leftovers (sometimes). I always cook the broccoli in the microwave and boil my chicken. The nice thing about this recipe is you can put as much broccoli and chicken in to make a hearty meal. Just make sure you have plenty of sauce or it will seem dry.

for our family dinner on July 1st I used tons of broccoli and chicken and cheese and then just added the soup mix (6 cans of a mix of cream of chicken and celery soups) and mayo (and lemon juice and curry) until it was quite wet, as she advised so it would not be dry
